Rhubarb season is here and we’re celebrating with this delicious rhubarb tart!

This tart is a terrific dish, perfect for pudding or for a sweet afternoon treat. The rhubarbs’ flavour deepens in the oven so they’re simultaneously intensely sweet, tart, and caramelized. Paired with a vanilla sour cream, the most magical (and simple) of pastry crusts, and some sugary crunch, each bite is a revelation. 150g butter

1 dl sugar (90 grams)

1 egg

3 dl all-purpose flour (180 grams)

1 tsp baking powder


250 grams sour cream

1 dl sugar (90 grams)

1 egg

1 tsp vanilla extract


fresh rhubarb

sugar 1 tsp sugar (optional)


Melt the butter and allow to cool. Add sugar and egg to cooled, melted butter. Mix the dry ingredients together and add to mixture. Grease a pie dish, or add baking paper like I did,  and spread the batter on the bottom.

Mix the filling ingredients together and add on top of the base.

Cut the rhubarb into sticks (I tried to choose the bright, pink parts) and add on top. Sprinkle a little sugar on top.

Bake at 175 C (347 Fahrenheit) for about 50min. Keep the rhubarb tart on the lower level of the oven so you’ll get a crispy bottom and the rhubarb keeps the pink colour.

    My mom used to give us a stalk of rhubarb as a treat. We dipped it in sugar before each bite. Rhubarb Tart sounds delicious and far more sophisticated! lol

      We use to eat raw rhubarb as kids as well – so sour!!! I also always make a rhubarb soup which is a typical dessert type of fruit or berry soup in Scandinavia. Sounds strange but it’s delicious!

    This looks so cool! Never thought of a tart like this and of course never tried one! But I am really curious about its taste.

      It’s a bit sour but sweet and works really well in a tart. Do you get rhubarb in Greece?

    I love rhubarbs! Though, I don’t like them in a pie haha. I rather eat them raw 😀

    Love this.. looks so amazing and tempting…and eating them with a pie looks like a great option
