I’ve been making these Nice Creams all summer in varieties of flavours. Today, I thought of sharing a recipe for this bowl of guilt-free mango nice cream with you and its just three ingredients. All good and healthy.
(this patch makes quite a lot so you can half it)
about 850 grams of fresh mango (chopped and frozen)
2 ripe bananas (chopped and frozen)
a generous glob of coconut milk
Throw the above into a food processor and press the button to blitz away…
Keep going until you’re left with light yellow, soft serve nice cream.
To serve it, toss over a few little extras.
I particularly like chopped coconut, but grated lime would be fantastic with mango ice cream too.
I’ve made other flavours with berries, cantaloupe and kiwi. Nice cream made from just bananas is delicious as well, but you add pretty much any fruits, spices, peanut butter or cocoa. All gorgeous, tasty and guilt free!
