For what do beautiful, breezy, sunny, weekend days call for if not a clean, crisp, alcoholic, adult Slurpee? This cucumber cooler is one of the lightest, most refreshing summer drinks. It feels like drinking a healthy green juice – with booze – they must neutralise each other, right?!
MAKES A PITCHER
2 cucumbers – some like to skin them, but I wouldn’t worry about it, you’ll keep more of the good stuff that way.
couple handfuls of mint
juice of 1 lemon
gin, we used Hendrick’s which is known to go well with cucumber
Non-alcoholic note: For a non-alcoholic cooler, replace the gin with chilled tonic water.
In a blender, or in my case a nutribullet, combine the cucumber chunks, mint leaves, lemon juice and a cup of water. Keep a little cucumber and mint back for garnish.
Blend together until you have a smooth mixture.
Stack some ice in your glasses, and garnish with cucumber or mint – or both.
Pour a generous slug of gin & add a good splash of elderflower cordial into each glass.
And top with your green juice.
Pop the rest into a pitcher with some cordial, gin and ice. Take the pitcher outside with you and sit back, relax and enjoy the sunshine.
