Finnish Blueberry Pie

Hei from Finland. I travelled to Kuopio last week to spend some time with family and friends. The weather hasn’t been ideal for outdoorsy stuff this week so we have gotten ourselves busy with baking, and of course, I want to share this super easy recipe with you too.

In Finland, a blueberry pie is a strong, late summer classic, with blueberries that everyone has a right (every-mans-right) to collect from our beautiful forests. The Finnish blueberries (or bilberries) are the kind that turns your mouth and tongue blue. You may find some forest blueberries at this time of the year in good greengrocers.

This blueberry pie recipe is delicious – tangy, but sweet – and so easy to make. Everyone who had a bite loved it!

150g butter

1 dl sugar (90 grams)

1 egg

3 dl all-purpose flour (180 grams)

1 tsp baking powder


250 grams sour cream

1 dl sugar (90 grams)

1 egg

1 tsp vanilla extract


about 4dl (240g) bilberries / wild blueberries that my mum picked

1 Tbsp of potato flour (or corn flour)

sugar 1 tsp sugar (optional)


Melt the butter and allow to cool. Add sugar and egg to cooled, melted butter. Mix the dry ingredients together and add to mixture. Grease a pie dish and spread the batter on the bottom.

Mix the filling ingredients together and add on top of the base.

Stir in the sugar and potato flour with blueberries and sprinkle on top.

Bake at 175 C (347 Fahrenheit) for about 50min.

Serve with vanilla ice cream or vanilla custard.
